Chickpea Avocado Salad in Pitta

INGREDIENTS

1 wholemeal pitta
1/2 can chickpeas
1/2 medium avocado
1/4 onion chopped
1/2 tbsp cilantro
half lime juiced
handful of spinach
1/4 cucumber
quarter chilli for spice (optional)

DIRECTIONS

Mash Chickpea and Avocado. Add in remaining ingredients and mix. Fill the pitta and top with spinach and Cucumber.

If you're meal prepping prepare all ingredients washed and chopped and add avocado on the day as it can go brown. Fill the pitta on the day then wrap and go!

Lentil Salad

SERVINGS

INGREDIENTS

1/4 cup cooked lentils
1/2 cup garbanzo beans
2 cups baby spinach
1/4 cup fennel
1/4 cucumber diced
1/4 lemon

Dressing

1 tbsp lemon juice
1 tbsp dijon mustard
2 tbsp olive oil
1 tsp honey
1 garlic clove minced

DIRECTIONS

Step 1 Blend all ingredients for the dressing.

Step 2 Combine all ingredients in a bowl and top with a tablespoon of dressing. Save the remaining dressing by storing in the fridge and use within 5 days.
