Thai Green Chicken Curry

This thai green chicken curry is a quick easy meal prep recipe you can prep at the weekend for the week ahead.

Just cook once, allow to cool and portion into containers before storing in the freezer for a weeknight dinner.

INGREDIENTS

olive oil spray
6 small shallots
3 garlic cloves
2 cm fresh ginger
500g chicken breast sliced
a handful of fresh coriander
2 tbsp lemongrass
400ml reduced fat coconut milk
1 chicken stock
2 tbsp thai green curry paste
2 tbsp thai fish sauce

DIRECTIONS

Spray a pan with oil. Add the chopped shallots and garlic and cook for a couple of minutes. Add the chicken cook for 6 to 7 minutes until the chicken is brown. Add the remaining ingredients and the fish sauce. Cook on a low heat for 25 minutes or until the chicken is cooked through.

Allow to cool and portion into meal prep containers. Store in the fridge for a delicious weeknight dinner option. Combine with wholemeal pitta or quinoa and salad.
